Yeah, i faced the same challenge. I understand why they do it like that (cameras potentially mixing socs)…
I think there are some make/ models on their project but its far and few. Ive flashed 1 camera so far but had to check the soc myself
I need to crack open my (cheap chinese) cameras and check them at some point. Ive noticed them pinging my pihole for secu100 for cloud services. At least theyre blocked for internet access!
Many selfhosted NVRs have been suggested. Personally ive tried:

Frigate
Zoneminder
Shinobi
Ended up settling on zoneminder at this stage.
For cameras themselves i just want to point out the OpenIPC project - opensource firmware if youre technically inclined

Its otherwise very stable.

But im still stubborn with not using whatsapp and my banking apps have passed safetybet luckily.
You could also look at setting up a matrix server whatsapp bridge… but maybe thats a selfhosting server thing and not android per se
Someone might suggest something more elegant but one solution is a trunk port, maybe on your router, maybe a downstream switch (assuming wireless Ap is downstream of all of those) and connect that to wireguard on your server?
I use syncthing for this. Keepass and photos sync instantly

I’d say thats honestly down to personal preference… For shapes/ polygons and bulk edits, im better using my keyboard and mouse. I only use the editing apps on the go to fill the odd incomplete detail or add a node/ shop. But thats just me. Use what you find easiest and most appropriate :)

Streetcomplete is for quickly contributing small details - very easy and user friendly.
Vespucci is for advanced editing - advanced. It has its uses on the go but i personally prefer using the web editor for bigger contributions
Maps:
Osmand. Feature packed but can be slow.
Organic - lighter weight. Updates the map monthly (or longer)
Magic earth - not open source, but that gives it the ability to pull traffic data from closed sources therefore apparently very good for driving navigation

I think Accubattery on playstore shows charge current. Im not sure where it gets the data from but it might be what youre looking for
Assuming you have a separate number for work:
Download shelter or island and create a work profile on your android device
Use your normal profile (and one instance of signal with personal number) for personal stuff
Use the work profile (second signal instance, work number) and separate contacts list for work
Link the work number/ signal to pc
